Spaghetti Aglio Olio with shrimps (prawns)

Today's menu as requested by MrFluff. The shrimp spaghetti oglio olio.


Ingredients:
Garlic 5 pips - chopped finely
Parsley
Chili flakes
Olive oil
Lime juice
Prawns
Salt to taste
Pepper to taste

Method:
1. Heat up the oil
2. Saute garlic and chilli flakes
3. Mix in prawns until its half cook
4. Add in spaghetti, mix it well
5. Add in parsley, lime juice, salt and pepper

Mix it all out and done!

Kurma Telur

I have no photos unfortunately. So next time. Anyway I used the same recipe for chicken during raya recently and it was good as well. So its a keeper.

INGREDIENTS
Rempah Kurma (using Adabi)
Plain Yogurt
1/2 tbls jintan manis
1/2 tbls Jintan Putih
Kayu manis
2 buah keras (candlenut)
Cengkih
Bunga Lawang
4 eggs
2 large onions
4 pieces garlic
1/2 inch ginger
5 pieces bird chillies
Tomato x 1
Green Chillies x 2
Potatoes x 2
Mint Leaves
Black Pepper (Course)
Cooking Oil


POUND:


CUT TO PIECES of 4:
Tomato x 1
Green Chillies x 2

PREPARE
1. Boil the eggs - put aside
2. Blend together (onions, ginger, garlic, bird chillies)
3. Tumbuk (pound) buah keras
4. Cut to pieces of 4 (Tomatoes, green chillies)
5. Make the paste with rempah kurma, jintan manis and putih


METHOD
1. Heat the oil
2. Add blended items
3. Add rempah mix
4. Add cengkih, bunga lawang and kayu manis.
5. Let it cook with medium to low fire until naik minyak
6. once naik minyak add yogurt , buah keras and add water
7. add in the potatoes, tomatoes, green chillies, mint leaves, black pepper, telur
8. let it cook sampai potatoes masak

Another sad love song

I have this bad habit, if I want something die2 also must try to get.

Especially if I am being denied of it.

In this case, apam balik.

I went to two differnt Pasar ramadhan with the sole intent to get an apam balik and went back empty handed instead.

Totally disappointed.

So I googled and found that ramai je orang buat homemade apam balik.

Next thing I knew, I have gone to jusco to get me the ingredients for apam balik (pilot mode la kononnya). Anyway, original recipe is from www.myresipi.com/top/detail/627, and upon quick glimpse, it seems that the ingredients are easy enough to get and most of it are already in the baking-container i have at home.


So here goes (by the way I halved the original recipe)
1 cup of Fluor - Checked. ada kat rumah
1/2 tsp Baking Soda - Checked. ada kat rumah
1/2 tsp Baking powder - Checked. ada kat rumah
180 ml water - Ofkos checked.
1 x Egg- Checked. I didnt half this one, tak reti camana yang put in setengah aja.

For the fillings:
Peanut - I bought the packed salted peanut. Tak larat nak prepare from fresh
Sweet corn with creamer - Never knew this thing exists! but easily found in any supermarket
Sugar

Making the batter:
-Mix Eggs and Sugar
-Add baking soda, baking powder
-Add water and flour
Beat until mixed well. The recipe did ask to leave the batter for half hour. Not sure why so I leave it for about 15 mins sampai dah nak dekat2 buka time.

1.Using my pancake pan - I pour the batter (about 1.5 ladle) and wait for the bubbles to form.

2. Once bubbles are form, sprinkle the fillings in.

3. Fold in two.


Okay, I buat two times. First time wasnt very appetising

Second time - looks better.

But the final verdict?
FAIL. I wouldn't buy an apam balik from me! seriously tak sedap. Rasa tu ada la sikit2, but somehow memang tak sedap. Maybe the batter wasnt right, maybe too much filling, and maybe the pan memang not suitable.

Of Ramadhan and bubuk lambuk

My stomach hasnt been very well these past few days, ever since I had that real bad food poisoning.

Because of that, I am still wary of eating macam-macam and somehow teringin nak makan bubur je. Tapi tak syokla makan bubur kosong, and in the fridge pun ada some meat. 

And I have always liked the masjid Kg baru bubur lambuk, so when i found this recipe here http://www.myresipi.com/top/detail/5478, and ingredients are also something that I can easily get from my grocery store, and walla.. Here u go..


I made some adjustments, and below is what i use instead of the original recipe


  • 1 cawan beras
  • 1 sudu besar minyak sapi - i skipped this
  • 2 sudu besar minyak masak (I put in 3, since I skipped the minyak sapi)
  • 1 kulit kayu manis, 1 bunga lawang, 2 bunga cengkih, 2 buah pelaga
  • daging
  • segenggam udang kering
  • 2 helai daun pandan
  • 1 sudu kecil halba
  • 1 sudu kecil jintan manis
  • 1 biji bawang besar 
  • 3 biji bawang putih 
  • 2 inci halia - i used ginger powder instead
  • 1 sudu kecil serbuk lada hitam
  • 2 cawan santan pekat (i used only 10ml)
  • 6 biji bawang merah - buat bawang goreng
  • daun sup dan daun bawang
  • Air dan garam secukup nya
  • Diced vege ( I just use the frozen mix vege)

Prep work:
- Dice the meat
- wash rice and put aside
- blend the ginger and get the juice (2 inch ginger and 2 cups water)
- sliced onion and garlic
- blend udang kering ( i didnt blend but i think would taste better if i did)

Method:
- Panaskan minyak
- Tumis bawang, garlic 
- Add kayu manis, cengkih, lawang, pelaga and halba
- Add the meat and a bit of water, add jintan manis, and udang kering
- when the meat looks well seasoned, add more water
- add rice
- put in daun pandan , pepper, garam
- add in the vege
- cook sampai beras jadi bubur-like
- once get the bubur texture, add the santan, let it boil few more minutes.


meanwhile tgh bubur nak masak, can prep the garnishing, buat bawang goreng and daun sup and bawang.


The verdict:

Hub says, its the best he ever tasted. Tak tahula cakap saja nak kasi encouragement or he was just being nice. In any case, he is not a fan... So cam takleh nak pakai sangat kot his feedback. Haha

My verdict pulak, its good - kena citarasa lah jugak. But then, sendiri masak of course la ikut citarasa sendiri kan kan kan...

Salmon Patty

Ive got lotsa salmon leftover from the bbq, so I decided to have a go at making Salmon Fish Cakes or also commonly called as Salmon Patty.

Few recipes call for ingredients that I dont have. But Jamie's was very simple and I have all the things needed make them.

Didnt actually follow the recipe to boot, kinda lazy to measure things up, so I just whip up whatever feels right.

Here's what I use:
It was probably about two slices of Salmon (not too sure since it was leftovers and already in broken pieces)
One potato (russet)
Two eggs
Lime juice (from quarter lemon)
a handful of english and italian parsley (more of english ones as I had plenty of those)
flour (in the mix, probably about one table spoon, for dusting I used more until it firmed up).


Method:
I first mashed the potato, salmon and parsley together












































Then added the eggs (beaten)




































Then the lemon



































Added flour to firm it up, salt and pepper to season it, and scoop up in a ladle to make patty
































Have not fried them yet so I dont know whats the end result's gonna be like. Will add pictures and comments on the taste.

Update: happy to report that it tastes quite good :)

Kari ikan (fish curry)

This recipe is measured for one piece of bawal


Tried and tested, finally one that works. (I actually had it for a while already, but didnt have the guts to try it out.  I jotted this down when sis (or was it mama) cooked it. This time I made sure I had exact measurements. So please excuse the unconventional way of my measuring - main hentam whatever that came to mind to describe the amount.

10 x Bawang merah 
5 x bawang putih
Rempah kari 2 small packets 
Rempah ratus 1 small packet
Minyak - about 10 cm depth 
Asam jawa - a size of pingpong ball
Daun kari - 2 sprigs
2 x bawang besar cut quarter
2 x tomato cut quarter
Bendi
One piece of bawal
Salt to taste
Sprinkles of course black pepper


1. Blend or slice thinly bawang besar and bawang putih
2. Heat the oil, and put in bawang blended/sliced
3. Make a paste out of the curry powder and rempah ratus.
4. Add the curry leaves, the curry paste once the shallots are lightly browned. 
5. Cook the curry paste until oil is separated from the mix ( orang melayu panggil naik minyak)
6. Get tbe juice out of the asam and add in
7. Add in a bit of water and the fish
8. If you want to put santan, this is when you add it in
9. Bring to boil and salt to taste
10. Add in quarted tomato and onions
11. Leave to cook for another few minutes, add water if too thick
12. Lastly add in the ladyfingers and blackpepper sprinkles

I am sooo over the moon finally I can cook a decent fish curry :)





Daging Masala (Beef Masala)

To be honest I didnt know what the daging masala is supposed to taste like. I bought serbuk masala at a whim and since I had it at home i just google up for recipe to try it out.

Google came up with a few hit and the first few links had the same recipe but different sites. I have no idea which one is the original recipe owner so I'm just gonna credit one of it (the first link).

Okay below is my modifications of the original recipe, cause I didnt have some of the ingredients.

Ingredients
400 gram daging tanpa tulang
Cooking oil
1 batang kulit kayu manis+2 kuntum bunga lawang

1/4 biji bawang besar - i use whole onion, because I found more onions gave better flavor)
2 ulas bawang putih
2 inci halia
1 sudu kecil jintan manis - skipped this cause didnt hv any
6 tangkai cili kering

2 sudu kecil rempah garam masala
1 sudu besar serbuk rempah kari
2 sudu besar serbuk rempah korma

1 cawan santan  pekat
2 biji kentang
1 cawan air
2 sudu besar kicap manis
1 sudu besar kicap pekat - i use light soy



Step 1
Blend onions, garlic, cili kering, ginger

Step 2
Tumis kayu manis and bunga lawang, together with blended items

Step 3
Meanwhile make a paste from the masala, curry and kurma powder. Add to the tumisan

Step 4
Once mixed well, add in the meat. I added a bit of water to simmer a bit because my meat wasnt the best cut

Step 5
Once it dried up, add in the coconut oil, water, potato, and kicap. Once it has boiled over twice, or when the meat and potato is ready, add salt to taste. 



I quite like it, and this recipe is definitely a keeper. Would not mind making it again. And maybe next time I will try it with crab - i think it will be super.

Char Kuey Teow

Dah lama nak try masak Char Kuey Teow ni but somehow never got around to it.

Dulu ada beli this fridge magnet with char kuey teow recipe and it has been there punya la lama, and each time bukak fridge I thought to myself, bila la nak buat ni...  Dah bertahun kot punya lama finally now baru nak buat, though tak ikut recipe dia cos macam too many ingredients (ni kes malas nak buat groceries shopping).




So I improvise (read cincai-ing) and ikut sesedap rasa instead:

1 packet of kuey teow (450 g)
1 tbl sp cili boh
Oil (abt 3 or 4 spoons)
Oystersauce 1 tblsp
A dash of light soy sauce
Abt 3 tblsp soy sauce (the likes of tamin/ habhal - i didnt hv dark soy sauce)
3 cloves garlic - crush
Taugeh - i like them a lit so i put in about 2 handful
Chives
6 large sized prawn
1 handful Cockles 
3 eggs


The method:

Note * make sure all ingredients are ready and handy cause u need to be fast because of the high heat. Which is why no picca as well, no time :p

Over absolute high heat, add in oil
When its hot, add in garlic
Stir, the add in almost immediately ciliboh
Add in oyster sauce, soy sauces
Add a bit of water if its too thick
Stir, then add in cockles, prawns
When prawn is half cooked add in the kuey teow
Toss it well so that the sauce is all even. I add in a bit of water to help it spread a bit
Once mixed well, add taugeh and chives
Add salt to taste
Lastly, put in the eggs 

Thats it!

Ikan kering goreng with chilli

 I am not sure if there is a proper name for this dish. Its basically just fermented fish, cooked with dried chillies and onions.

Very simple dish, and uses everyday ingredients.

What you need:
A handful ikan kering (sliced thin)
A handful dried chillies (cut about an inch)
Two onions (sliced)
2 cloves garlic
An inch of ginger (sliced thin)
Cooking oil (for frying)


1. To cook, first fry the ikan kering. Put aside. Should look something like this once fried.


2. Sautee the remaining ingredients except ginger. Sautee until the onions became brownish

3. Finally, add the ginger and the fried ikan kering. Mix well and serve.

Grilled Salmon with alfredo pasta

This is my first time trying alfredo pasta. Wasnt very successful, the sauce came out a bit curdled, maybe next time i should add a bit of water and simmer less.

The recipe was from:

Ingredients:
+ butter
+ cream
+ parmesan cheese
+ parsley
+ crushed garlic
And  I added  a bit of salt and pepper as well.

Initially I wanted to cook the salmon as part of the alfredo, but changed my mind in case it doesnt turn out well. It was a good call, because Mr Fluff was making faces at my alfredo when he realised that there was cheese in it.

He said it was quite nice, but I dont think he enjoyed it very much. I guess this one is not going to be a repeat - since I am not exactly a fan of Alfredo either.

Miso soup

A friend bought me the Miso soup paste after hearing that I have been looking for it. Apparently a lot of the off the shelves miso paste contains non-halal ingredient. She got this one from a shop selling natural goods, and ingredients are all vegetarians and no achohol.

For the dashi stock, you will need (i got the konbu and bonito flakes from Isetan KLCC):
- 2 x 4 inches konbu ( some kind of dried seaweed)
- 1 x cup of bonito flakes (shaved dried fish flakes)
- 4 cups of water 

For the add ons, basically you can just add on anything u fancy, some have seaweeds, or those soft tofu, it really is up to you but I prefer these:
- dried tofu
- spring onions

And not forgetting the miso itself. Mine is a paste, but it also comes in powder.

I am not gonna rewrite it since it was practically the same, so I'll just post the pix of what I did.

Finally:



The final verdict -

Taste wise, its quite okay and not too bad for a first try.

However, would I be making it again? Maybe not. While its quite easy to make, its too time consuming ( because u need to let the konbu sits for a while) and the ingredients are not exactly cheap.  The ingredients costs nearly RM20, maybe more, while you can just have those at the Japanese restaurants for around RM2.50 per bowl. Doesnt really justifies it, but of course u will know for sure that it is halal and if you make the dashi stock in big batches, you can always skip the time consuming bit and have it ready in less than 10 mins.

Dont ask me why it became senget benget, because i seriously have no idea. And kalau senget benget but edible takpe jugak, ni nay, it is not fit to consume either... Huhuhu..

And since the filling was successful (after two tries i hv to say) ,I just improvise and makan with apple instead. Habih cito..

Strawberry milkshake

Two words : easy peasie!

What u need (to make about 1 ltr):

1. Strawberries 25 pieces ripe medium size
2. 3 tablespoon cream ( i didnt have milk, so i substitute with cream)
3. 200 - 300 ml chilled water or crush iced
4. Sugar 4 tsp 
5. Blender 

The process:
1. Blend the strawberries with water
2. Add cream and sugar, blend a bit more

And we are done!

Cream mushroom soup

Never knew that Oyster mushroom could also be used to make mushroom soup.

I googled up and saw some others making it with assorted mushrooms like button & wild ones.

Since oyster mushroom's all I have, and I have a lot of those, i just gave it a go.

I didnt measure exactly so I'll just use rough estimation in the list.

Ingredients:
-oyster mushroom (1 bowl / 2.5 cups)
-water (1 bowl / 2.5 cups)
-half piece chicken stock cube
-6 tblsp olive oil (if still not enough add a bit more)
-shredded cooked chicken meat (3 tblsp
-2 tblsp cream
-2 tblsp thyme
-salt n pepper to taste
-italian parsley (garnish)

The method:
1. Sautee onions until translucent
2. Add mushroom, sautee till soften
3. Add water and chicken stock cube
4. Bring to boil
5. Add thyme, salt and pepper
6. Simmer until taste is blended well and soup thickens a bit
7. Turn off fire and blend the mushrooms. I used a hand blender so it can be done on the pot itself and while its hot. If using a normal blender please cool it off a bit before blend.
8. Once blended, simmer a bit more and add the cream

Serve while hot, and dribble a bit more cream as deco, and garnish with italiab parsley if prefered.

Pineapple jelly with strawberry toppings

Next door neighbor is having a raya open house, I didnt have the time nor the right stuff to prepare something more substantial.

Anyway Mr Fluff thought its not necessary to bring anything since it is an open house, but being rumah sebelah i feel its just good gesture to come with something rather than empty handed.

And desserts is as good as any, and it takes minimal effort, and very little time to make.

What you need:
- one packet of agar2
- water 1400ml
- coloring (i didnt hv any hence the pale color)
- mix fruit (i only use pineapple & cherry)
- sugar (i use about 1 cup, can reduce if prefer less sweet)

The method:
1. Just boil water with the agar2
2. Add sugar and coloring once boil
3. Stir until all dissolve
4. Turn off fire

In the serving casserole:
1. Put in the mix fruit - arrange sporadic

2. Pour the agar2 mix

3. Cool room temperature until less heaty (abt 5 mins)

4. Cool in refrigerator until serving time


Note: i didnt hvae any coloring hence the garnishing of strawberry on top to make up for it.

Kek pisang

I had few over ripe pisang at home, and had made some cekodok, but still left with extras.

So I tried kek pisang, which is one of my favorite. Satu lagi favorite is kek pandan tapi tengok recipe macam complicated so until today belum try2

Anyway. As usual googled up recipe, tengok mana yang senang.

Found one that is simple and with all the ingredients yang memang dah ada at home;

2 cwn tepung gandum
1 s/k baking powder - i didnt add (tak tahu pulak its different than bica-soda)
1 s/k soda bikarbonat
1 cawan gula
3 biji pisang yang telak dilenyek
1/2 cawan minyak masak
esen vanila
2 biji telur

caranya

1. Ayak tepung gandum, soda bikarbonat dan baking powder, gliss acuan kek dan panaskan oven 180darjah.

2. Kemudian, putar telur dan gula hingga kembang, masukkan esen vanila dan pisang, putar lagi dan kemudian masukkan tepung.

3.Akhir sekali baru masukkan minyak masak dan kacau sebati, selepas itu masukkan dalam acuan kek dan bakar pada suhu 180 darjah selama 40 minit atau satu jam.

The outcome:
- Hangus sikit, i think 30 mins is sufficient
- the taste- okay.. Not so fantastic but not disappointing either

Picca? Sila jgn gelak at my kek pisang hangus ok

Dim Sum for supper

Errr no, I didnt make it myself. I bought frozen - supposedly pre-cook ones.

Just need to steam and there goes.. A homemade dimsum

The verdict - so so only except the dumplings. Siew Mai is ok but i think it needed few more minutes before it tastes its best. The roll, i reckon deep fry would be better.

Cooking instructions:

To steam with pressure cooker (which is what I did):
Around 10 mins with low pressure

To steam (non pressure):
I think need 30 - 40 mins

To fry:
Just fry until skin turns brownish

Alternatively can just boil or add in the soup, i think probably take around same time it took to steam (cos it is slightly raw, and NOT precooked.

Kurma daging

Update: Tested last saturday. Not so successful at first due to lack of onions. Recipe corrected.

Below recipe is just my notes and has not been tried yet. Will refine once tested.

It is measured to make one kilo meat.

The ingredient of kurma paste (garam masala):
-kulit kayu manis x 1 •
-jintan putih x 2 tbsp
-jintan manis x 2 tbsp •
-kas kas x 2 tbsp (or more)
-cengkih x 4 pieces •
-buah keras
-halia x 1.5 inch
-small red onions x 7
-big onions x 3
-garlic x 3
-black pepper x 2 tbsp
-coriander/ketumbar 1/2 cup

Blend red onions first to liquidify the others. Add in all others and blend well. It should come up like a paste.

Other ingredients:
- Meat x 1 kg (cut in big chunks)
- Santan x half kelapa
- 2 spoons x yogurt
- bawang besar x 2 (cut in quarters)
- bunga lawang x 2
- daun pudina
- cili hijau (cut in halves)
- asam keping x 2


Directions:
1. Mix well meat with kurma paste and pinch of salt

2. Heat oil (lots) + 1 tsp butter

3. Tumis bunga lawang and the meat already mixed with kurma paste

4. Add in hot water, to help meat tender

5. Add in santan + bawang besar. Cook till meat is tender.

6. Towards finishing, add daun pudina + asam keping + green chillies

This recipe is the Penang version where the consistency is thick.

Lasagna

I didnt use any specific recipe, instead just looked at few and tried it.

Most recipe calls for about the same main ingrediants and cooking method.

What i did was:

1. Cook the meat with chopped onions, garlic, thyme, basil and rosemary. Sautee first then let simmer.

2. Somewhere added the cubed tomatoes and tomato puree (small can).

For layers
I put the lasagna sheet at the bottom after lining the casserole with baking oil.

Then one layer if meat, followed by parmesan, then meat again, and finally mozarella.

The bakingdish i was using wasnt a deep one so i could only manage those 3 layers.

Baking settings
Preheat at 200c for 15 mins, bake with cover at 180c for 30 mins (top and bottom), uncover and bake for another 10 mins


The verdict:
1. Meat and sauce wasnt well blended. Most recipe said to simmer in low fire in a dutch oven for about 2 hours. I have neither the 2 hours nor did i hae the dutch oven. Because of this, my meat turned up dry, but not flavorful enough.

2. Too little cheese. Need to be very generous otherwise coulnt taste anything.

3. I should hv added a layer of potato as well to hold the cheese better
